"French Game Gourmet" Dinner Buffet

Game dishes, which were once only available on the high cuisine of the court, mark the European culinary culture. In French cuisine, game dishes are very popular and have long traditions in many regions of the country. 

 

Harbour Restaurant of The Harbourview is pleased to launch “French GAME Gourmet” Dinner Buffet in February. A series of sumptuous French game dishes creatively made with nutritious ingredients of wild mushrooms, boar, wild goose, hare, venison, etc., imported from France are specially prepared along with a selection of AOP French Cheese, and fresh seafood and sashimi to bring you a brand new gourmet experience. 

 

Here are the signature game dishes we recommend and we have categorised them into two sections:

 

1. Wild Mushrooms - Blue Foot Mushroom, Wood Hedgehog, Ceps, Chanterelles

Wood Hedgehog with Macaroni Pasta and Pecorino Cheese and Chanterelles with Sardine, Brioche and Tomato Salsa are healthy and delicious cuisines prepared by simple cooking method. Other recommendations are:

 

Blue Foot Mushroom Tempura with Herbs Mustard

 

Ceps with Duck Liver and Champagne Jelly

 

2. Game Meat - Boar, Venison, Hare, Guinea Fowl, Wild Goose, Lamb, Veal Loin

The nourishing signature French game dishes are prepared with the hearty rare game meat from France by traditonal cooking method. In addition to Roasted French Baby Lamb, Goose Effilee Confit with Potato Gratin and Dark Rum Raisins, other choices include:

 

Guinea Fowl with Artichoke, Cabbage, Bacon and Lemon Butter

 

Venison Carpaccio with Black Truffle, Chive and Parmesan Cheese

 

Veal Loin with Poached Egg, Asparagus and Truffle Butter

 

Boar Leg with Mixed Nuts Crumble, Celeriac Puree and Blue Cheese

 

Terrine Section - Hare, Venison, Boar

 

How can you enjoy French cuisine without cheese? Our Executive Chef has selected 15 choices of AOP French cheese and will introduce and recommend the cheese of your choice at the counter.

Fresh Seafood: Canadian Snow Crab Legs, French Golden Sea Whelks, New Zealand Mussels, Edible Crabs, Fresh Shrimps, Clams, New Zealand Oysters, etc.
